Description
The experience begins with an introduction to agave spirits, covering their history, role in biodiversity, and cultural significance in Mexico. You will explore the origin, history, and tasting notes of each spirit.
For example, learn about Comiteco, a pulque spirit from Chiapas made from aguamiel extracted from Agave Americana in Comitán. This aguamiel ferments in living vats nurtured for generations, creating a unique aromatic and structural profile.
Participants will identify the aromas, flavors, and potential pairings of each spirit, linking them to the artisanal production process. A sensory game introduces a key ingredient, such as cinnamon, to recognize its scent separately and within the drink, explaining the inspiration behind the accompanying cocktail.
This process is repeated with five distinct agave spirits, each presented with an exclusive cocktail designed to highlight its character. After each tasting, the setup is cleared to reveal a new story, spirit, and a deeper connection between mixology and the essence of agave.
