Begin in a contemporary cooking studio located in the Roma Norte neighborhood. Meet your chef instructor and enjoy a welcome drink of agua fresca, coffee from selected Mexican beans, or a special infusion. Learn about the history of Mexican cuisine while preparing for the experience.
Take a walking tour of Mercado de Medellín, exploring the market’s rich history and cultural significance. Taste quesadillas made from native corn at an organic tortillería and observe the traditional nixtamalization process. Discover multiple chili varieties at a chili stand, sample 100% raw cacao and hand-made artisanal chocolate from Oaxaca, and try exotic insects like crickets, chicatana (flying ants), and chinicuil (worms). Seasonal native fruits such as mamey, chicozapote, and tuna, along with hand-crafted ice cream, are also included.
Return to the cooking studio for a hands-on class where you will prepare 10 different Mexican salsas using various cooking methods including roasting, frying, and raw preparation.
