Description
Cook Grandma Felícitas' Mole Poblano in a private home in Coyoacán — a family recipe passed down for three generations, taught by her granddaughter at Casa Mexicaníssima.
This is not a commercial cooking school. You will join a group of no more than six people in a real Mexican kitchen, where the host learned to cook from her mother and grandmother, both originally from the state of Puebla—the birthplace of mole. For 3.5 hours, you will prepare Mole Poblano from scratch along with red rice, the rice that accompanies it on every Mexican table. A vegan version is available upon request.
As you roast, grind, and season, the host will explain the Nahuatl names and pre-Hispanic origins of each ingredient—chile ancho, cocoa, pepitas, cinnamon—and how they came together over the centuries. The class is symbolically dedicated to Chicomecóatl, the Mexica goddess of corn and sustenance, as a gesture of respect for the indigenous roots of Mexican cuisine.
Mexican folk music plays while you cook, and a clip from a Lucha Libre movie brings another piece of Mexican popular culture into the kitchen. When the mole is ready, everyone sits at the family table to share the meal – as is done in Mexican homes.
Before you leave, the host prepares your itacate: a traditional Mexican portion of mole with chicken and red rice to take away. She will explain what itacate means to the locals — a gesture of affection that says the meal continues after you leave.
