Description
Join a hands-on cooking class led by the granddaughter of Grandma Felícitas in her Coyoacán home. You will prepare Mole Poblano from scratch, accompanied by red rice, a Mexican staple. A vegan version is available upon request.
This is not a commercial school but a genuine Mexican kitchen where the host shares recipes learned from her mother and grandmother, both from Puebla, the birthplace of mole. During the class, the host explains the Nahuatl names and pre-Hispanic origins of ingredients such as chile ancho, cocoa, pepitas, and cinnamon, tracing their fusion over time.
The class is dedicated to Chicomecóatl, the Mexica goddess of corn and sustenance, honoring the indigenous roots of Mexican cuisine. Mexican folk music and a Lucha Libre movie clip provide cultural context while you cook. When the meal is ready, sit at the family table to share it together.
Before you leave, receive your itacate, a traditional take-home portion of mole with chicken and red rice. The host will explain the cultural significance of the itacate as a gesture of continued hospitality.
