Discover Mexico City through a true cultural and gastronomic lecture on the go. This small group experience is designed for those who not only want to eat, but also understand the origin, evolution, and technical secrets behind Mexico's most iconic dish: the taco.
Throughout this culinary journey, we'll decipher 'Tacology' at three strategic stops that combine living history, sensory workshops, and urban haute cuisine:
We start at a neighborhood mainstay to understand the historical origin of the taco, La Taquería Tradicional. Here you'll learn the cooking techniques of the most iconic stews and, most importantly, urban etiquette: the posture, the grip, and the art of eating a taco like a true 'mexa' without losing a drop of salsa.
We'll enter a family space where recipes are the guardians of time. Here you'll not only eat, but also touch and learn. We'll have an interactive demonstration on the biodiversity of Creole corn, the ancestral process of nixtamalization to create the perfect tortilla, the taxonomy of chili peppers, and the use of pre-Hispanic tools such as the metate and the molcajete.
We'll round off the tour at an establishment that managed to elevate street food and the simplicity of tradition in the eyes of the world, earning a place in the prestigious Michelin Guide thanks to its undisputed excellence and respect for the original recipe.
