Like all bad ideas, it came late one night in 1988 when Carlos Anderson ordered one more chalupa and Billy ordered another round of mezcal. They thought it would be a good idea to leave Carlos O'Brian's in Puerto Vallarta and move to the desert of Baja California Sur. It was there that they rented an abandoned warehouse and began what is now known as El Squid Roe. Somehow, this seemingly 'bad' idea turned out to be brilliant.
