Hartwood's menu changes daily based on the sea and land that offers new harvests each day.
Sustainable unforgettable experience.
Throughout the week, they travel hours into the interior of the Yucatan to markets and farms where they collect ingredients that allow them to offer their customers a new and exciting taste of a community that has existed for centuries. All of these aspects come together each day and allow for a humble way of cooking within an environment that we are truly grateful to be a part of.
Hartwood is off-grid.
By necessity, they consider sustainability first and foremost in all their work and in every decision at the restaurant. Solar panels, power the lights and music and every other little thing that keeps the restaurant running. They break down our waste with zero carbon footprint, creating 100 percent organic compost that is used in regenerating the mangrove environment and interior farming.
All cooking is done by open fire within a hand-made wood-burning oven and grill. Every single ingredient that is touched is deeply rooted within Mundo Maya. They use only sustainable fishing methods to ensure a thriving and healthy aquatic life.
