Homemade corn tortillas are a revelation. They boast a depth of flavor and pliable texture no store-bought tortilla can rival. Learning to make them, however, takes a little practice and is best done under the guidance of a seasoned expert. In this Small Group Workshop, you and just 24 other students will learn from one such pro, Mely Martínez. Together, you and Mely will make masa, shape tortillas, and practice cooking them properly. We’ll cover how to select masa harina or make your own masa from scratch (we will use masa harina in class), different tortilla shaping methods and equipment, and the right kind of cookware. You’ll also learn to make gorditas, the tortilla’s chubby cousin. At the end of this 90-minute workshop, you’ll have a pile of warm, fragrant homemade tortillas and gorditas ready for dinner and a new skill to add to your culinary toolkit.
